My life revolves around one motto: “Desserts are the fairy tales of the kitchen—a happily-ever-after to supper.” You’re never too full when it comes to desserts because as we all know, “desserts don’t go to your stomach, they go to your heart.”

What is the one thing that never fails to lift up your mood instantly? What is the one thing that can take you to a whole new world in just a bite? For me it is dessert. Three hours before a huge deadline when I’m having panic attacks, it is only a bowl of ice cream or a slice of a cheesecake with its creamy rich texture and a fresh blueberry/strawberry topping that keeps me sane.

Desserts are Love

Desserts have such a high rank in my heart that not only do I find peace in eating them, but also creating them. The entire process of making a dessert is therapeutic for me. It can be a long process- and you may not succeed in the first go- but trust me the final result is always worth the patience. From gathering the ingredients to measuring and combining them, each step has a unique satisfying effect on me. It seems like I have control over my life when I’m mixing the batter- even if it is just for a few minutes.

When I am cooking for people who are close to me, I always try to put in all my love in the process to make it more special. The smile that they have on their faces while trying out a cookie or a brownie I made is more than enough for me to never let my love for cooking fade away.

In celebration of these therapeutic brownies, I am attaching the recipe for one of my most liked desserts below.

Recipe for Walnut Brownies:

INGREDIENTS

  • Butter – 200 grams
  • Cocoa powder/ cooking chocolate – 6 tablespoons (heaped)
  • Caster sugar – 1 cup
  • Eggs – 2
  • Flour – 1 cup
  • Baking powder – 1/2 teaspoon
  • Vanilla essence – 1 teaspoon
  • Chopped walnuts – 1/3 cup or as per your taste

Method

  1. Start with softening the butter (room temperature) and then mix in the cocoa powder/chocolate in it until no lumps are left.
  2. Whisk in caster sugar. Whisk it until smooth.
  3. Add in the eggs one by one and the vanilla essence, whisk it more.
  4. Finally add and mix sifted flour, baking powder, and half of the chopped walnuts in the batter.
  5. Sprinkle the remaining walnuts on top of the baking tray. Bake it for 15 minutes at 180 degrees or until the top seems cooked. The inside should be gooey when you take it out.
  6. Serve walnut brownies hot or cold, depending on your preference
